This is literally the best sandwich I have ever eaten. I’m not just saying this because my husband made it, I mean I really and whole heartedly feel that way. This was just too good not to share with you all.
The slaw is Martha Stewart’s recipe but I found it on one of my favorite apps, Yummly. If you like to cook and love trying new recipes you’ll appreciate this app!
All you’ll need is…
1/3 cup light mayo
1/3 cup sour cream or Greek yogurt
2 table spoons Dijon mustard
Just from half a lemon
1 tsp of sugar
Salt and pepper to taste
Mix well and refrigerate until you’re pork is ready.
It’s so simple but the creaminess and acidity cut the heaviness of the pork and BBQ sauce.
As for the pork, Erick and I bought a pork shoulder, rubbed a store bought applewood rub and added extra heat (cayenne), and added paprika, rosemary, thyme and oregano. We scored the fat/pig skin, seared it on all sides on high heat, placed it in a porcelain dish and sealed it VERY well to make sure all the moisture remained in the meat and cooked it at a low 250 degrees for 7 hours checking it every couple hours.
You can put It on any type of bread, our favorites for this type of sandwich are either potatoe buns or egg challah. I recommend toasting the bread for another level of texture and because it holds all the flavours in the right places.
Sounds like a lot of work but it’s really not especially when it’s done on a lazy Sunday and besides that the tastes results are worth it!
