Cranberry Bark!

This is a super simple Christmas treat to leave around for everyone to munch on, but make a couple batches because everyone will love it!

All you’ll need is…
1 cup dried cranberries
1 cup chopped almonds
1 lb chocolate (white, milk or dark, I mixed all 3 and it was a HUGE hit, but if you prefer one over the other, by all means use it!)

Melt your chocolate (either in the microwave in 30 second intervals or in a Pyrex bowl over bowling water). Once the chocolate is melted, pour onto a wax paper lined baking sheet, allow to cool to room temperature.

While the chocolate is cooling, chop your cranberries and almonds. You do not have to but I recommend you toast your almonds, it deepens the flavour. Either bake the almonds for 8-10 minutes at 350 in the oven or on the stove in a sauce pan on medium heat for about 6-8 minutes.

You can also add other dried fruits or nuts. My mother in law had dried cherries, dried blue berries, candied ginger, and pistachios, wall nuts and macadamia nuts, whatever your heart desires, but I stuck with the original recipe of just cranberries and almonds.

Place your chopped dried fruits and nuts on top of the chocolate and be sure they are pressed into the chocolate. The next and final step in placing the tray in the fridge until solid, then brakes into pieces and serve!
