Apple Cinnamon Muffins!
For weeks now I have been craving apple muffins and after being bed ridden for days I had an itch to get up and do anything. This is a super easy recipe, so if you’re not a baker, do not fret, it’s pretty fool proof and you should have most of the basic ingredients in your pantry already.
These are moist and hearty muffins and can be served as snacks, a brunch side, dessert… The list goes on and on!
(Makes 6-9 muffins)
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/3 cup butter
3 teaspoons lemon juice
1 egg
1/3 cup milk
2 apples – peeled, cored and chopped
Mix all the dry ingredients, add the wet ingredients, fold in the chopped apples and portion the batter out evenly in your muffin tin. Bake for 20-25 mins at 400 C (200 F).
You can add different ingredients as well! Next time I’d like to add dried cranberries, or chopped walnuts and maybe some oats. To make the muffins a little more decadent, simply add a crumble on top of the uncooked batter,
